Honey Glazed Radishes and Turnips

Turnips are loaded with fiber and vitamins K, A, C, E, B1, B3, B5, B6, B2 and folate (one of the B vitamins), as well as minerals like manganese, potassium, magnesium, iron, calcium and copper. INGREDIENTS
2 tbsp. butter
1 large shallot
1 1/2 lb. radishes
1 1/2 lb. small turnips
1 c. water
1/4 c. lower-sodium broth
1 tbsp. Honey
salt
pepper
2 tbsp. thinly sliced mint leaves
1 tbsp. finely chopped chives

DIRECTIONS

In 12-inch skillet, melt butter on medium-high. Add shallot and cook 2 minutes or until golden and tender, stirring occasionally. Add radishes and turnips; stir until well coated. Stir in water, broth, honey, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Heat to boiling. Reduce heat to medium-low; cover and cook 15 minutes.

Uncover and cook 7 to 10 minutes longer or until vegetables are glazed and most of liquid has evaporated, stirring occasionally. Remove from heat and stir in mint and chives. Transfer to serving platter and garnish with mint leaves.
